Ingredients:
10oz frozen bag of Cascadian Farm organic blackberries
1 cup organic coconut palm sugar (unrefined)
1 cup organic Spelt Flour
2 tsp baking powder
1/2 tsp Himalayan sea salt
1 cup vanilla almond milk
1/2 cup vegan butter, melted
1-9 inch organic spelt pie crust
Directions:
In medium bowl, mix blackberries with 1/2 cup sugar. Let stand until thawed and syrup forms (about 45 minutes). Heat oven to 375 degrees F. In another medium, mix flour, 1/2 cup sugar, baking powder and milk together. Stir in melted butter until blended; pour into pie crust. Spoon blackberry mixture over batter. Bake 45 minutes or until dough rises and is golden.
