Raw Mango Salsa

Your taste buds will make you do the Salsa! I made this salsa last night and let it marinate in the fridge overnight. You don't have to wait this long to eat it though. All you need is at least 30 minutes for the flavors to blend together. We had this salsa on Kale leafs for lunch today, but you can use your favorite leafy green, crackers or tortillas. Enjoy :)

Ingredients:
1 Mango, diced
1 Tomato, diced
1 Lemon (or Lime), squeezed
1/4 Red Onion, diced
1 Orange, squeezed
1 Red bell pepper, diced
1 Green bell pepper, diced
1 tablespoon Cilantro leaves, minced
1 tablespoon Basil leaves, minced
1 pinch Cayenne (Black pepper or chilli pepper)
1 pinch Himalayan Salt (or Sea Salt)
3 tablespoon Raw Coconut Vinegar (Distilled or Apple Cider Vinegar)
4 tablespoon Extra Virgin Olive oil

Combine the lemon juice, orange juice, olive oil, vinegar, red onion, cilantro, pepper, basil and salt in a container and let it sit for about 30 minutes.

Diced up the mango, tomato, red and green peppers, then put in a separate container and mix together.
