Pumpkin Pie
Ingredients
1 small pie pumpkin, cooked & pureed -OR-
1 (15oz) can of organic pure pumpkin puree
14oz can of condensed sweetened soy milk
2T flaxseed + 6T spring water -OR- 2 eggs
1 teaspoon organic ground cinnamon
1/2 teaspoon organic ground nutmeg
1/2 teaspoon organic allspice
1/2 teaspoon sea salt
1 (9 inch) unbaked deep dish spelt pie crust
Directions
Preheat oven to 425 degrees F. Combine flaxseed and water and set in fridge for 10 minutes. Mix pumpkin puree with spices then add the flaxseed and milk. Pour into pie shell and bake for 15 minutes. Reduce temperature to 350 degrees F and bake for 45 minutes. Allow pie to cool for 2 hours.
