One of my favorite healthiest vegan chocolate chip cookies ever with a hint of coconut flavor!
Ingredients
1 1/2 cups coconut sugar
1/2 cup coconut oil
6T almond milk
1/4 cup banana (about 1/2 mashed banana)
2t vanilla extract
2 1/4 cups spelt flour
1t baking soda (aluminum free)
3/4t fine himalayan salt
3/4 cups mini chocolate chips (soy-free, dairy-free)
Directions
- Beat the first six ingredients until well blended in a large bowl. Combine the flour, baking soda and salt; gradually add to sugar mixture and mix well. Stir in chocolate chips and nuts.
- Drop by rounded tablespoonfuls 2 in. apart onto baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Cool for 1 minute before removing from pans to wire racks. Yield: 3-1/2 dozen.
